This Protein-Packed Lean Curry Recipe Takes Just 12 Minutes

It’s Thursday, which is basically the new Friday. It can only mean one thing: it’s time for a curry. And we have just the dish for you, and here’s the best bit, it contains a whopping 56g of protein. Forget the popadoms, you don’t need them. Trust us.  

You Will Need…

• A chicken breast, pre-cooked and sliced into chunks

• Eggs, 2, boiled and halved

• Microwaveable basmati rice, 125g

• Spinach, handful

• Onion, ½, chopped

• A red chilli, chopped

• Raisins, 20g

• Chicken stock, 400ml, made with one cube

• Full-fat coconut milk, 50ml

• Biryani curry paste, 1½tbsp

• Tomato paste, 1tbsp

• Coriander, bunch, chopped

• Flaked almonds, 25g

Calories: 821, Protein: 56g, Carbohydrates: 72g

Method

0-2 minutes – Put the coriander, almonds, eggs  and spinach in a microwaveable container. Then, in a bowl, mix the onion, chilli, raisins and chicken, stirring through the stock, coconut milk and the two pastes. Now pour the mixture into the container.

3-11 minutes – Fix the lid onto your container and place it in the microwave on
